Frequently asked questions

Why a Tunisian oil rather than Italian or Spanish?

Tunisia is one of the world's leading olive oil producers. For decades its finest oils were exported in bulk to be bottled elsewhere under other flags, and they rival the greatest Mediterranean oils. The Chetoui variety of northern Tunisia is renowned for its exceptional polyphenol content. We bottle it at the source, under its real name.

What is an early harvest?

Olives are picked while still green, at the start of the season. Yields are lower, but the oil is more intense, fresher and markedly richer in polyphenols: the choice of fine-dining oils.

How should the oil be stored?

Away from light and heat, tightly closed. Ideally enjoy it within 12 to 18 months of harvest, when its aromas are at their peak.
